- Boar meat 800 gr

- bay leaves 5
- juniper 5 berry
- rosemary
- capers 1 handful
- olive oil 6 spoons
- chilli
- black olives 20
- white wine 1 glass
- tomatoes 4

Wash carefully the meat with vinegar, dry and cut it into pieces; put the boar stew ina saucepan with onions, carrot, celery, bay, juniper, sage, rosemary, caper, all minced together. Add oil, chilli an the olives. Cook at high flame; when well roasted, add the white wine, hot, and at the end the tomatoes. End the cooking at low flame. |
