- 250 g of homemade stale bread
- 3 ripe red tomatoes
- 1 cucumber
- 1 red onion
- 5 big leaves of basil
- olive oil q.s.
- 3 spoons of red vinegar
- salt q.s.
- black pepper q.s.

Cut an onion in two and put it in a bowl with some water. Soak the stale bread for a few minutes then drip and squeeze it gently. In a tureen put the bread, the sliced tomatoes, the sliced cucumber, the sliced onion and the basil in small pieces; turn well and season with olive oil, vinegar, salt and pepper. Leave it to stand for about ten minutes in the fridge. |
