INGREDIENTS PREPARATION
  • Sirloin 1 piece 1200 gr
  • chicen and rabbit liver 800 gr.
  • sliced bacon 10
  • puff pastry
  • white onion 1
  • brandy 1 glass
  • butter 100 gr.
  • egg white 1
Brown the onion in butter, then brown in the fillet and put in a dish apart. Put the chicken and rabbit liver in the slightly fried onions, add half glass of brandy and singe till browned (3 or 4 minutes9; let cook for further 4 minutes. Mince the liver and onions, then stir to cream. Singe again with the remaining brandy. Open the puff pastry on the table, spread over it part of the liver patè and then lie over the fillet. Roll the bacon slices up the fillet, then spread over the remaining patè. Close the puff pastry and and swab with the egg white. Bake at medium temperatur for 50/60 minutes, checking the cooking point with a little cut: if needed, bake 10 minutes more. Let it cool for 10 minutes before cutting the meat in thin slices. Decorate with pomegranate seeds.
