Braised Beef in Red Wine

INGREDIENTS PREPARATION
  • Lean beef (scamone) 1,5 kg
  • margarine 120 gr.
  • rewd wine ½ liter
  • onions 5
  • carrots 2
  • 1 celery rib
  • broth 1 liter
  • white string
Clean the onions, cut in slices and cover with water in a bowl. Clean the carrots and cut them in four vertical parts, clean the celery e cut it in two vertical parts. Salt and tie the meat, put it in a saucepan covering it with margarine. Drain the onions and put them – together with carrots and celery – around the beef. Pour in the wine and the broth, totally covering the meat. Cover the saucepan and bake for 5 hours at 180°, rolling the beef when half-baked. As soon as cooked remove the meat from the saucepan, cool it and cut in slices. Serve with its sauce, warm.
