- Pork meat (arista) 1 piece, 1 kg.
- fresh rosemary 2 little branches
- garlic 3 cloves
- white wine dry 1 glass
- extravergine oil 4 spoons
- salt and pepper as needed
- vegetable broth ½ liter
- white string

Peel the garlic, wash and dry the rosemary, removing the little leaves from the branch. Mince together garlic and rosemary, add salt and pepper and mix well. Spread uniformly the chopped ingredients over the meat, then tie it with the white string. Pour the oil in a baking pan, put in the meat and bake in hot oven at 280° (max temperature). After 5 minutes, low the temperature at 200° and pour the wine in the pan. Let it cook 1 hour, rolling several times the ‘arista’. Pour in – if necessary – some broth. As the meat is well done let it cool and cut it into thin slices. Lay the slices on a dish, warm the sauce and serve immediately. |
